The one-auger mozzarella moulding machine is a machine that suits the production of spun cheese.
It is possible to obtain, thanks to its versatility, a variety of spherical products (mozzarella, scamorze, provole with and without heads, ovoline, etc.), with a weight varying from 5 to 750 gr. (spherical products) and up to 650 gr. for parallalepiped products. By applying a special insert installed in place of the drum trainer, to obtain braids with different diameter and length, depending on the different needs.
